海膽日式茶碗蒸 / Uni Chawanmushi

鮮味uni炸彈! 4個撇步做出鏡面無毛孔的日式蒸蛋!

海膽又稱海中牛奶,這次挑戰的是零毛孔的日式蒸蛋,使用前天分享的昆布鰹魚高湯(dashi stock),日式蒸蛋建議大家還是搭配高湯味道差很多,正統高湯做法 vs. 水中加一小匙鰹魚粉的懶人法味道真的天南地北阿,高湯Dashi的實際烹調時間不過十幾分鐘,快動手做做看吧!
